To support its research strategy on vegan meal solutions, the Flavours group at Nestlé Research is seeking a Flavour Specialist.

As a scientist in the flavours group, you will lead activities/projects on the relationships between ingredients, transformation pathways, organoleptic properties to improve consumer preference for accelerated innovation. In-depth knowledge on the important role of flavour molecules, their formation during processing and ways to modulate their presence in final products are key competencies to strengthen the R&D strategy.

A day in the life of a Flavour Specialist

 

• Plan, lead and execute research projects/activities to improve flavour in the area of vegan meal solutions
• Contribute to other Nestlé R&D projects where flavour improvement is needed (internally or within external collaboration)
• Provide flavour expertise & assistance for Operations and R&D (in collaboration with R&D Centres, R&D Networks & Markets)
• Propose new analytical/data mining tools and/or product development related to flavour generation and sensory performance
• Develop Nestle external network & collaboration in the field of expertise
• Coach junior scientists/technicians/master students
 

What will make you successful

 

• PhD in Flavour, Food or Analytical Chemistry with good technical competencies on mass spectrometry techniques for flavour analysis (e.g. GC-MS, LC/MS, on-line techniques)
• Strong knowledge and competencies in flavour chemistry (e.g. flavour generation, flavour stability, sensory relevance), and link to raw materials and food processing
• Additional knowledge on sensory science, chemometrics, or other relevant areas is an asset
• Ideally minimum 3-4 years of work experience in running scientific activities in the field of expertise
• Experience in managing projects and building & managing relationships with key internal & external stakeholders at senior level
• Previous experience working in cross functional teams
• Excellent communication skills in English (written/oral)
