Position Summary

Responsible for dough based development projects, this role focuses on the delivery of innovative and ambitious and competitive products across Nestlé’s portfolio of Pizza and snacking. This bakery developer will apply their knowledge of bakery concepts as well as ingredient and process expertise to new and existing product platforms.  This role requires clear technical understanding of projects from concept exploration & prototyping to refining and factory industrialization.   Besides technical knowledge, strong  communication & presentation skills are needed for success.

 

 

Product Developer, Technical Knowledge

  • Demonstrates mastery of bakery concepts, dough formulation and bakery process knowledge
  • Able to formulate and develop new and innovative products on the benchtop or in the pilot plant effectively.
  • Participate in consumer research works with cross functional team to further understand and translate consumer benefits to product attributes
  • Able to transform culinary bakery creations into manufacturing feasible products that deliver important consumer benefits for concept testing.
  • Able to optimize prototype design utilizing culinary, bakery and manufacturing expertise
  • Balances consumer preference with nutritional, financial, and manufacturing requirements during prototype development
  • Performs competitive analysis within the category
  • Provide technical assessment, prepare prototypes and conduct processing, shipping and shelf-life testing for consumer testing on new product concepts
  • Plan, coordinate and conduct bench top, pilot plant and manufacturing plant tests coordinating all necessary resources internal and external and utilizing various trial, recipe, and nutritional management systems

 

 

Project Management/Leadership:
-Participate in cross-functional team (Marketing, Quality Assurance, Engineering, sensory, etc.) to deliver projects within timeline.
-Ability to effectively manage time and allotted project resources. 
-Effectively communicate project risks and opportunities. 
-Incorporate knowledge of bakery process while following Nestlé standards (safety, legal compliance, GMP, USDA, etc.) including appropriate documentations (experimental reports, trials, technical plan, specification etc.)

 

 

 

JOB QUALIFICATIONS

-Bachelor’s Degree in Bakery Science & Management or master’s degree or PhD. In Grain or Food Science and technology, or Food Engineering.

-Minimum 3 years of Food industry Experience in a product development, research and development role.

-Network with specialists of the same area and within Nestle and NPTC FOOD, partner with various businesses, to deliver important science and technology to support project progress.

 

SUPERVISION RECEIVED:

A proactive independent person that can work with minimal supervision. There will be at least two formal meetings with the supervisor to evaluate the progress toward the goals.  There is also the opportunity to work closely with other members of the management team for guidance. There will be formal training sessions set up for all newcomers to Nestle as well as specific courses required as an R&D employee.  The supervisor will set up a training plan, and it is the responsibility of the individual to execute the plan.

 

SUPERVISION GIVEN:

This individual does not have any direct reports
